About the knives:
The concept of Small Batch production was born from the idea of being able to offer a great performing knife at a reasonable cost.
As some of you may know, DP Custom Knives is a one man operation so this concept was based on the premise of being able to lower the manufacturing costs through economies of scale by partnering with a manufacturing facility.
Sounds pretty straight forward but let me assure you that this could not be further from the truth. It has taken me 4 years to find the right manufacturing partner who would share my vision and uphold my values of producing high quality chef knives.
These knives are manufactured in Japan to my specifications. The manufacturing process is a mix of traditional techniques and modern technologies. We used the finest carbon steel, Aogami Super as the core material. The heat treatment process is specific and precise, resulting in a superb edge holding ability and toughness. The knives are hand ground, achieving a great balance of being thin enough behind the edge to offer effortless cutting but also not too thin where you would be worried about damaging the edge. The handle is made from super practical Pakkawood – i.e. impregnated wood veneer.
To sum it up, this is a great product at a very reasonable price. I am very proud to offer this new line of Small Batch production knives to my customers.
